Oven to 375

A
Onion sliced thin
Corn cut from 4 cobs
3 chopped peppers (red, green, and some other special kind)
Chopped scallions – white and green parts
3 chopped garlic cloves
Salt
Cumin – 2 t
Oregano – 1 t

Saute A in olive oil starting with the onion. When it is very soft, add the rest. Saute 8 minutes, turn heat way down to warm.

Add cheese – ½ c of shredded mild white cheese – I used Jarlsburg.
Add ¼ c chopped olives, ¼ c minced parsley, pepper, cayenne (if the special pepper wasn’t spicy) 5 basil leaves, minced.

Stir until cheese melts, transfer to greased 9X9 dish.

Beat 4 eggs and ½ c buttermilk

Gently pour custard over veggies, dust with paprika, bake 35 minutes.
